Boy-oh you’re gonna love these Spicy Stuffed Albuquerque Carrots! For years, I had been cooking this cool dish, with different editions of it. However, I just found the time to finally make it for ya! There are COUNTLESS ways to enjoy this tasty meal, although for today we’re viewing one of the possible ways to cook these tasty carrots!
But before we start, here’s a fan fact: Originally, the idea for this recipe came to me, after one of my favorite cartoon heroes ever mentioned that food and then I got stubborn and tried to make it happen! In the end, I found out that not only that recipe really existed (only with a different name), but also that many people were cooking that dish quite often.
-4 big carrots
-1 red belly pepper
-1 orange belly pepper
-2 red hot chili peppers
-1 glove garlic
-5 teaspoons tabasco
-2 tablespoons olive oil
-2 tablespoons black pepper (spice)
-1 tablespoon salt
HOW TO MAKE IT:
Clean the carrots very well, but do not remove the peel! Instead, boil some water, put it into a big bowl and add your carrots. If not all of them can be put in there at once, then chop them into 2 pieces each. Leave them warm and get softer for at least 10 minutes.
Chop the rest of your ingredients, juice up your tomatoes, crush the garlic into powder and warm a saucer pan, adding olive oil. Put your ingredients (except from the carrots) inside and cook for 10 minutes, until the sauce gets solid.
Set your sauce aside to chill and take a very small spoon, or carving cooking tool, in order to dig your way into your carrots. Be extremely careful, while digging into your carrots, as they might brake. If you have never done this before, then take it slow!
After you have dug your way into your carrots deeply enough, add the stuffing inside. Bake for 10-15 minutes on high level heat.
